
Ingredients:
6 tbsp butter *frozen* plus extra to butter baking pan
2 cups flour (plus extra for dusting hands and work area)
1/4 cup sugar
2 tbsp brown sugar plus 1 tbsp for garnish
3/8 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda
1/8 tsp salt
1 cup greek yogurt ( I used half vanilla half plain)
2 tbsp orange juice
the zest of 2 oranges
1 egg
1/2 heaping cup of frozen blueberries
Preheat oven to 425 F.
Sift flour into a large bowl, then add sugar, spices, baking soda, and salt. Mix these dry ingredients together.
Grate frozen butter into the large bowl, coating the pieces with the dry mixture.
In a medium bowl, mix together yogurt, orange juice, and the egg.
Add the zest of two oranges to the mixture.
Mix wet ingredients together with the dry ingredients in the large bowl, until just combined.
Stir in the frozen blueberries.
Butter the baking pan and coat it with flour.
Flour your hands and work area. Shape the dough into a large flat circle, then cut it into triangles. The dough does grow when baking, so make them a bit smaller than the desired size.
Place the triangles onto the pan, leaving ample space between them (2 or 3 inches), and bake them for 12-15 minutes or until golden brown around the edges.
Sprinkle with brown sugar and let them cool, then enjoy with clotted cream, butter, or jam. :)
