Vegan Sweet Potato Monkey Bread

Sweet Potato Bread

2 large sweet potatoes

3 cups of flour

3 tbsp sugar (split into 2 tbsp and 1 tbsp)

1/2 tsp of salt

1/2 yeast cake (12.5g)

1/4 cup of warm water

1/4 cup melted vegan butter

2 tsp cinnamon

1 plastic storage bag

Glaze

4 tbsp brown sugar

1 tsp cinnamon

1/4 cup melted vegan butter

1/2 tsp vanilla extract

 

Bake the two sweet potatoes until you can easily pierce them with a fork, ( ~ 45 minutes.) Once they are baked allow them to cool and then scoop the insides out and mash them in a large bowl (or use your food processor,) until they reach a smooth consistency. Put these aside, and combine your yeast cake and warm water, then add this mixture to the sweet potatoes. Stir in your melted vegan butter as well. In a medium size bowl, combine your flour, 1 tsp of sugar, and salt. Once combined, slowly add the flour into the wet mixture. A nice doughy texture should be achieved. Put the dough aside for an hour to rise.

Once your dough has risen, add your 2 tbsp of sugar and 2 tsp of cinnamon into a plastic bag. Preheat your oven to 350 F. Separate the dough into little balls about 1 tbsp or slightly more in volume, then drop 4 or 5 sweet potato bread balls into the cinnamon sugar mixture, close the bag, and shake it. Add these to your buttered bundt pan, then continue this coating process until the pan is about 3/4 full of these bites of sweet potato bread.

In a small sauce pan, melt down 1/4 cup of butter. Add in your brown sugar, cinnamon, and vanilla extract and stir on medium heat until the mixture is combined and a little bit thick. Pour this mix over your bread in the bundt pan, and then bake the monkey bread for about 45 minutes. Let it cool then enjoy!
