Turmeric Cupcakes

Ingredients:

Cupcakes:

2 cups flour

1 1/4 tbsp turmeric

1/8 tsp nutmeg

1/4 tsp salt

1 tsp baking soda

1 1/2 tsp vanilla extract

1/2 cup brown sugar

1/4 cup white sugar

1 cup oat milk

1/2 cup butter melted

1 egg

Frosting:

1 1/2 cups powdered sugar

1/2 cup unsalted butter

1/8 tsp salt

2 tsp white vanilla powder

1/8 tsp cinnamon

 

Start by preheating the oven to 375 degrees F. In a medium bowl, combine the flour, turmeric, nutmeg, salt, and baking soda. Once mixed well, put this bowl aside. In another large size bowl, stir together your melted butter, brown sugar, white sugar, milk, vanilla extract, and the egg. Slowly stir the dry ingredients into the wet mixture until just combined. Fill the cupcake containers 2/3 full then bake the cupcakes for 10-12 minutes or until they're just cooked through.

To make the frosting, cream the butter at a medium/high speed and add the powdered sugar in 1/2 cup increments until all the sugar is incorporated. Sprinkle in the salt, vanilla powder, and cinnamon then mix well and keep it in a cool place until the cupcakes are ready.
