Banana Bread

Ingredients:

3-4 brown, very ripe bananas

2-1/2 tbsp sugar

1 egg

3/4 cup of flour

3/4 cup steel cut oats

1/2 cup melted, salted sweet cream butter

1 tsp baking soda

1 tsp salt

1/8 tsp nutmeg

1/4 tsp cinnamon

1 tsp vanilla extract

1/4 cup chocolate chips (optional, could substitute with walnuts)

This recipe is quick, and it only requires one bowl, so there is little cleanup! Mash the bananas with the sugar, the egg, and the melted butter, combining them into a thick paste. Pour in the flour, oats, baking soda, salt, and the rest of the spices, then mix well. Fold in the chocolate chips, then pour into whatever container you prefer. Be sure to butter and flour the pan so it doesn't stick! Bake loaf for ~40 minutes, or mini muffins (as pictured above) for ~6 minutes or until golden brown around the edges. Once you can stick a fork into the middle without getting batter on it, remove from the oven. Let the bread cool and enjoy! :)

 

While these are quite sweet, the mini muffins are great to have as a little snack to start your day. Additionally, we subbed out some flour for oats to increase the amount of protein and fiber!
