Vegan Pho

Broth:
1 box vegetable broth (I used Progresso)
1/2 tbsp Vegemite
2 tbsp liquid amines
1 stick of cinnamon
2 stars of star anise
~ 6 pieces of clove
1/2 onion
1 tbsp olive oil
x oz mushrooms ( half shitake, half white button)
Salt to taste
Additions:
1 package Extra firm tofu
cauliflower ( ~ 1 cup)
carrots(~ 1/4 cup)
celery (~ 1/4 cup)
red peppers (~ 1/4 cup)
broccoli (~ 1/2 cup)
Rice Noodles ( 1/2 package)
Garnish:
Cilantro
Sriracha
Thai basil
Lime
bean sprouts
Disclaimer: This recipe takes a good amount of time to get the broth very flavorful so make sure you have enough time to let it simmer!
1. Add your spices into a large pot and let them toast on medium heat. * If you have a cheese cloth, skip this step and you can wrap your spices in it and tie it like a tea satchel and add it to the broth to make extracting them from the broth easier!*
2. Add the mushrooms to the pot along with some olive oil.
3. Slice your onion as thin as possible and add it into your pot.
4. Pour in the vegetable broth along with about 2-3 cups of water.
Stir in the Vegemite and liquid amines. Add salt to taste
5. Cover your pot and let the broth simmer at least 2 hours. ( I did about 4 hours and I next time I might try 6!) Taste your broth every 30 minutes to an hour. The star anise satchel/loose spices will need to come out earlier usually in the first 2 hours so their flavor is not too strong. When you feel the flavor is distinct in the broth, remove them either by fishing them out or pulling out the satchel.
6. When your broth is near complete, put another pot of water on to boil.
7. For the additions listed, pick and choose whatever you prefer to add to the soup. These are my suggestions, as well as how much of each to add. I threw my cubed tofu in the air fryer for about 14 minutes on 385 and it came out as if it was fried. Chop up whatever vegetables you want evenly and put them aside.
8. When the water is boiling, remove it from head. Stir in the rice noodles and let them soak in the hot water.
9. Add the vegetables to the hot soup and turn off the heat.
10. Assemble your bowl noodles first, then pour your broth and veggies over the top. Mix and match garnishes to taste and enjoy!
Note: make sure to store your broth separate from the noodles. Sometimes people even store the veggies, broth and noodles separately. The noodles change consistently when heated up in liquid so keep this in mind if you're eating leftovers!
