Edamame Asian Inspired Burgers

Edamame Veggie Burger:

2 cups edamame

2 medium/large shallots

1/2 cup of carrots

4 tbsp butter (separated 3 and 1)

1/2 cup shredded carrots

1 cup mixed finely chopped red and orange bell pepper

2 cloves of garlic

1 cup of cooked bulgar wheat

~ 4 tbsp finely cut chives

1/3 cup chopped cilantro

1/2 cup Japanese style seasoned panko

2 tsp lemongrass paste

1 tsp chilli pepper paste

1/4 tsp wasabi powder (optional)

1/2 tsp granulated garlic

salt to taste

lettuce for garnish

Sauce

6 tbsp cream cheese

6 tbsp sriracha sauce

1/2 cup cilantro

 

Burgers:

1.Preheat your oven to 350 F.

2. Add your edamame, 3 tbsp butter, and shallots to a pan and let them cook on medium heat for ~ 4 minutes.

3. Add in the garlic and peppers and cook for an additional 2 minutes before adding in your carrots and reducing the heat to low.

4. In a medium mixing bowl, add 1 cup of warm cooked bulgar wheat, 1 tbsp butter, the finely chopped chives and herbs, and the lemongrass and chilli pepper paste. Stir well.

5. Take your edamame vegetable mix off the stove and transfer it to your food processor. Pulse the mixture on low until it seems about half blended, but half or 1/3 of the veggies are still intact.

6. Pour the contents of the food processor into your mixing bowl with the bulgar wheat.

7. Add in the panko crumbs, garlic powder, and wasabi powder to the mixing bowl as well.

8. Fold all of these ingredients together until you get a thick mixture that takes shape when you roll it. Add salt to taste.

9. Roll the mixture into balls. The size depends on how big you want your burger. I rolled mine into ~ 2.5 inch balls then patted them down slightly to make sliders.

10. Put the burgers on an oiled or buttered pan and let each side brown. Once the sides are browned, take the burgers off heat.

11. Transfer your browned burgers to a sheet pan and let them bake in the oven for ~ 10 minutes.

12. In the last 2 minutes or so, throw your buns in the oven to brown as well. I always put my oven on broil for the last minute to give them some color.

13. Assemble your burgers with lettuce and your favorite toppings enjoy!

* The burgers can easily be made vegan by using vegan butter BUT this sauce pairs really well with the burgers if you do eat dairy!*

Sauce:

In a blender/food processor, add cream cheese, sriracha, and cilantro. Pulse... and thats it! Spread the sauce on top of your burgers and enjoy.
