
INGREDIENTS:
1/2 piece of naan (we used whole wheat)
1 egg
Trader Joe's South African Smoke Seasoning Blend to taste*
salt and pepper to taste
1/4 cup spinach
1/4 of an avocado, sliced
1/4 cup shredded cheese (four cheese Mexican or cheddar)
olive oil
I prefer to make this quick breakfast in 1 big pan to help with cleanup, using one side of the pan to cook the egg and the other to warm your bread. On one side of the pan, add a little olive oil, then your egg with salt and pepper to taste, (the picture shows scrambled because it's neat for on the go but fried also comes out beautifully.) Lightly brush some olive oil onto both sides of your naan as well, then place it on the other half of the pan. Sprinkle the shredded cheese over the naan and let it melt. Once your egg is done to preference, place the spinach onto half of your naan, then put your egg on top. Grind some Trader Joe's South African Smoke onto your egg, place your avocado slices on top of your egg, then press the naan closed into a sandwich and enjoy!
*Trader Joe's South African Smoke Seasoning Blend is a personal favorite breakfast spice because it adds a smokey flavor that isn't too common in vegetarian breakfast dishes. I'm particularly excited about it because Trader Joes discontinued it last year but it's back! If you don't have a Trader Joe's or don't want to purchase it, there are seasoning blends available online like this one i found!
While the egg may start your day off with protein, this sandwich adds a little green into your morning by adding spinach, which is chock full of vitamins and nutrients like calcium, potassium, and iron. Additionally, the avocado and whole wheat also add fiber, and the avocado adds good fats to your diet to start your brain and the day off on a healthy high note!
